At Rebread, we believe in turning bakery surplus into quality products. Our commitment to sustainability and zero waste initially led us to create a unique craft alcoholic beverage using surplus bread. By upcycling leftover bread into premium spirits, bakeries not only reduce waste, but also offer a rich and distinctive flavour profile that appeals to connoisseurs and newcomers alike.

From Waste to Resource – A New Beginning

In 2021 we were inspired by the Austrian bakery Bäckerei Therese Mölk, which transformed surplus bread into craft alcohol. Collecting leftover bread from our former bakery and other local bakeries, we developed a craft distillate known as aqua vitae, or ‘bread vodka’.

A unique taste for everybody

Our ‘bread vodka’ recipe offers a sensory experience similar to whisky or bourbon. The aroma evokes wholemeal bread with hints of cranberries, cereals, hay, and fruit, especially plums. The taste combines bitterness, tartness, and creamy, milky notes with subtle hints of nuts, providing a long and warming finish.

Despite the distillate's high alcohol content of 43%, the taste remains surprisingly delicate – making it a great choice for both men and women.

Crafting with Simplicity

Using traditional, straightforward distillation methods, our process requires minimal equipment and short production times. This process fits perfectly with the upcycling trend, with each 0.5 litre bottle saving up to three loaves of bread.

Our recipe includes a distillate made with 100% craft strength alcohol. All of the alcohol comes from the bread distillation process.

This approach not only preserves the unique flavours of the bread, but also maximises sustainability by utilising a commonly wasted resource as well as saving the use of primary materials. Each bottle is a testament to the art of craft distillation, creating a premium product which may include a variety of combinations depending on the baked goods used in the process.

Awards Won

Our acqua vitae has won awards including a double gold at the 2021 Warsaw Spirits Competition, the largest event of its kind in Poland.

It scored 92.1/100 points and was named Debut of the Year by the Spirits.pl portal, showcasing its uniqueness and quality.
